I can't tell you how many times I've had to do the fast chill on a bottle of white and the chilling karma was just not in my favor... Soggy and drippy from the ice/water technique or worse, leaking and almost frozen, forgotten in the freezer. What a great idea! My smaller-sized fridge doesn't leave me much room to keep several bottles of wine in a constant state of "chill" - but when I want to grab-and-go with a cold bottle to bring to a picnic or concert in the park, I end up stopping at the wine shop for a chilled bottle instead of bringing something from home. But for the cost of one of many last minute store-bought bottles, problem solved
